Green tea is unfermented. The leaves are plucked and left out
in the
sun to wither. Leaves are either steamed or pan-fried
to prevent fermentation
otherwise known as leaf oxidation.
The leaves will then be rolled and
dried to preserve freshness.
Green tea has many of the nutrients left
intact from the plant.
The absence of fermentation produces a cup of
tea that is
slightly green in color and described as a grassy fresh taste.
