Pu-erh tea can be made from a variety of teas. The tea
is left to age
and will continue to ferment giving a very
dark look. Pu-erh teas can
come in the loose variety or
in the better-known stamped cake style.
Pu-erh teas are
also known as aged teas. The general rule of thumb is
the older the tea the better. New pu-erh can take on a
very earthy taste
that is rough. The older the pu-erh the
more refined it becomes. The
oxygen in the air will change
the tea and create a cup of tea that is
distinctively rich,
robust, earthy, and smooth.
