white tea
White tea is unfermented. Young leaves are plucked before they fully open
and are steamed and dried. The name white tea arises from the fine white
hairs still present on the leaves. The leaves are not rolled and the tea
produced will generally have a pale yellow color that is generally described
as smooth light and sweet.
